I believe that once a person gets out of high school is when they need more schooling like such as becoming a chef at VIU because when a person get out of high school is when they are still fresh minded and need to learn more because if one takes a year off and then goes to school, in my eyes, I say that that person may be a little slow on things from slacking off a year or partying too much. So I'm planing on going to VIU after the summer in August where I will learn how to become a chef and experiment with different types foods such as deli or bakery. My plan has started and was started last month, I had signed up online and all I would have to do is graduate, which I plan on doing. I had spoken to the councilor and it is a great trade to get into especially when you love it. I plan to take two years of culinary arts classes, the second year is optional and I plan on taking that option. During the VIU school years I plan on working at Moxies where I will be getting more experience in the kitchen and hopefully become the main cook but on the other hand I just recently stopped at Cactus Club and had seen that the chefs there cook outside of the kitchen where other could see, I might want to apply there and become a main chef there also. But ya never know where I'll end up with a mind like mine always changing his mind.

The one thing that I have that others may not is inspiration to cook in the kitchen. I had been inspired by my father ever since I first cooked with him. The first thing that I cooked with my father was spagehtti , he had showed me his way of cooking the sauce mixing things that I never knew you could put in a spagehtti sauce. At first I thought the sauce was ruined but in the end it actually turned out pretty goood i must say. After cooking with my dad and watching him add different types ingredients inspired me to expirement with different type of foods in the house, and I got to say I did make a bit of a mess in the kitchen. Inspiration is key in the working environment because it makes the person thrive to become something bigger and also make them a hard worker that you could rely on. So the one thing that I could bring into the working world of becoming a chef is inspiration.

The one product or food item that I love to use is pasta because I know more about using pasta such as spaghetti or an Alfredo dish. Pasta is very easy to make and use at home or at the kitchen because its such an easy process. All that you would have to do is grab some flower and some eggs to make the dough. Roll the dough out after kneeing, but in the mean time could make sauce while kneeing, and then cut the flat dough into strips like spaghetti noodles. After cook the noodles in salted water for 4 minutes. Its such an easy process to make at home but if I were to use this process in the kitchen I would have to make the dough ahead of time so then it be more faster. But the unique thing about pasta is that it could be mixed with many different kinds of sauces such as ravioli, tortellini, Alfredo, spaghetti.
Spaghetti is my main meal though because it is one of the first meal I had ever made. My dad was the one who had taught me his way of making the sauce, which I consider very tasty. It is also very cheap to buy the noodles and sauce but cheaper to make from scratch, but I got'a say that it is worth every bit of your money to make spaghetti at home. The unique thing is that people could have fun and experiment with the sauce by adding all kinds of vegetables and spices. But I must admit that Spaghetti is one of my favorite dishes out of them all.

Writting in a profesional world #7
If I wanted to excel in the cooking industry I would need good writing skills, which would be very helpful to use, to write out procedures on how to cook certain types of foods or maybe put together a fancy menu. If i where to become a great well-known cook I would possibly be writing a cook book which will be needing high writing skills to establish.
Having bad writing skills could result in not getting hired or selected because of the poor resumes or flyer's that the person had put out. No one wants to read a book or a sheet that has poor writing because its hard to read steps if the steps doesn't make sense. The key objective is to be able to write out procedures clearly not poorly. But on the contrinary I'm considering on becoming a chef not an owner of a restaurant so what I really need is good communication skills because one could not work in a kitchen without the help of communicating with other individuals. A chef who can communicate his requirements well is one who will not only teach their staff as efficiently as possible but keep their staff as well. Communication skills are key components in the role of a chef.

Dear Lorna,
I’m Ty Laughlin, you might remember me from our meeting last month. I am currently a student attending Dover Bay Secondary where I will be graduating with a certificate that would hopefully bring me through one of the programs at VIU. I have already sent an application in respect to my seating for next year’s culinary arts program but I wish to have guidance on what I will need such as books and supplies.
I am also currently attending the cafeteria program at Dover Bay where I have been learning new skills in the kitchen. What inspired me to excel cooking is meeting the chef at school and getting to know more on how it is like to be one.
The main purpose is to find out what is needed to be done after registering a seating at VIU and what I will need before beginning the course. Will be very much appreciated if you could send back to me at: tylaughlin@hotmail.com
Thank you for your time and effort
Sincerely, Ty Laughlin

Hi again Ty,
I see Admissions just mailed you a letter saying they either need your BC Personal Education Number or a transcript confirming you are about to complete Grade 12 graduation, OR you will need to write an assessment test.
Also you need to provide Admissions with proof you have FoodSafe Level 1 before they put you on the list for a seat in our Culinary program.
Once you provide proof of Gr 12 or pass the assessment AND you provide proof of Foodsafe, then they will put you on the list of people who are admitted and are waiting for a seat in an upcoming intake of the program. I do not know how soon you would be actually starting in the program, that depends on how many people are ahead of you. Right now the program starts each September, so it might mean waiting an extra year.
As for program costs and supplies: program costs are always updated on this link:
http://www.viu.ca/calendar/TradesAppliedTech/culinaryartsfees.asp
A list of supplies is given out by the head of the program a few weeks before the program starts, when the person has moved up the waitlist enough and been told by Admissions that they will get a seat in that September program intake. However the cost for the supplies is on the link above.
I hope this all makes sense. Let me know if you have more questions.

My profession image
When I'm at the job I will have to be a team player and be very kind to the hungry folks because if they like the service they'll always come back for more. On the job I will be wearing a chefs hat and apron, possibly including pants and work shoes, and will have the equipment ready to go in the kitchen for anything that is needed to be cooked. If a custumer comes into my workplace I will greet them and present myself to show that I care for their hunger.
Tools of the trade
There is one thing that will always have to kept safe and that's the knives which would have to be bought on my own meaning that I will only use them in the kitchen at school. It can be hard to master a knife and never make a mistake like cutting your finger, which had happened to me not too long ago. A teacher at VIU will teach me everything that I need to know about knives, which makes me excited to even think about.
